Who loves Irish coffee? 🙋‍♀️ This post is intended for ages 21+. Please drink responsibly. When we dine out, we love ending a delicious meal with Irish coffee. But I never realized how effortless it is to make Irish coffee myself until I received a bottle of Carolans Irish Cream to try! (If you've never had #carolansirishcream, you MUST find some. It's got more cream than most brands, and the honey taste really comes through on the finish--sooooo yummy!) Here's how to put together an Irish coffee in about 45 seconds! 1) Get yourself a cup of hot coffee. 2) Drop in 2 sugar cubes and stir until they're dissolved. 3) Pour in 1 oz Irish whiskey and 1 oz Carolans Irish Cream. 4) Top with whipped cream and chocolate shavings. And that's it! Mushroom Quinoa is such a quick and easy side dish that's healthy, too! Compared to a cup of white rice, a cup of protein has twice as much protein and about 5 grams more fiber. Plus it's got less calories and less carbs than white rice, too. Quinoa also has antioxidants and anti-inflammatory properties. It's the perfect grain for anyone looking for a healthy alternative to rice. It's even gluten free! To make my mushroom quinoa, I prepared @prozis Royal Quinoa according to the package directions. While it was cooking, I sauteed onions and mushrooms in about 2 tablespoons butter. I added those to the cooked quinoa, along with some fresh parsley, salt, and pepper. I was looking for something spicy tonight, and wow, did I find it! These yummy Parmesan-crusted chicken sandwiches got an extra kick from @carusoprovisions Chicago Caviar. This fine-cut, spicy giardinera was just what I needed to create an aioli with a kick. I combined about 1/2 cup mayo with a tablespoon and a half of Caruso's Chicago Caviar, about a tablespoon of lime juice, and a large pinch of salt. I breaded thin chicken breasts in egg, then a mixture of breadcrumbs and Parmesan, then fried them until golden. I topped them with Provolone and served the chicken on ciabatta rolls with tomato and a slathering of aioli.
